Recipe of the Month: October

Hello everyone! I'm proud to announce I will be bringing back my monthly recipe articles, for everyone new reading this. Each month I will post a unique recipe for different types of cookies, brownies, and other baked goods. And to start this year, we will make my favorite, peanut butter, and Chocolate Chip cookies. Now, you also have the option of adding candied nuts, which is a bit more of a process to make, but adds a lot to them. I'll be teaching you how to make those as well below. 

Recipe: 

Makes ~24 Cookies 

Ingredients You'll Need: 

  • 2 Cups and 3 Tablespoons all-purpose flour 

  • 1 Teaspoon Baking Soda 

  • 3/4 Teaspoon Salt 

  • 1 Cup (2 Sticks) Butter, room temperature 

  • 1 Cup Brown Sugar

  •  1/2 Granulated Sugar 1 Cup 

  • Peanut Butter (Can use any brand, partial to JIF) 

  • 1 Egg 

  • 2 Teaspoons Pure Vanilla Extract 

  • 3/4 Cup Chocolate Chips (more or less works, measure with your heart) 3/4 Candied Nuts (OPTIONAL) 


Directions: 

  1. Set the oven to 350 degrees.

  2. In an electric or hand mixer, stir butter until creamy. 

  3. Add Brown and Granulated Sugar, and mix until light and fluffy. 

  4. Add Peanut Butter and mix until fully combined. 

  5. Add Egg and Vanilla and mix until smooth. 

  6. Fill a separate medium-sized bowl with flour, baking soda, and salt. Whisk together until fully combined. 

  7. Add flour mixture and mix until fully combined, being careful to slide flour that stick to the sides back down into the dough 

  8. Add in Chocolate Chips until fully mixed into the dough. 

  9. If adding Candied Nuts, stop and make them now. 

  10. Add Candied Nuts and fully mix them into the dough. 

  11. Use a Cookie Scooper or form dough balls roughly 2 Tablespoons large, and then place them evenly across your pan so that each cookie can spread fully. Bake one pan at a time, rotating halfway through baking for 8-10 minutes until the cookies have spread and the cookies are firm. (FYI, depending on your oven you'll have to leave them in for longer. It's something you'll get a confident grasp on with experience. I usually have to add at least another 5 minutes to the power of my oven) 

  12. When Cookies are done, take them out and let them sit in the pan for 3-5 minutes, then transfer them to another surface like a plate or a wire rack. Enjoy your hard work and effort! 


Candied Nuts Recipe:

 While I've only used these for the recipe above. These can be used in other cookies and even eaten as a snack! 

Ingredients You'll Need:

  • 3/4 (UNFLAVORED, I like to use pecans or Walnuts, but pretty much any kind would work.) 

  • 1/2 Cup of Granulated Sugar 

  • 1/4 Teaspoon of Salt 


Directions: 

  1. Get a small saucepan and fill it with the nuts, sugar, and salt. 

  2. Slowly stir over medium heat, watch carefully as the sugar and salt turn brown and start to stick to the nuts. 

  3. Turn the heat to low and continue to stir until the nuts are fully caramelized. 

  4. Turn the heat off and immediately transfer the nuts into the dough. The nuts should still be hot, heat the dough and warm up the chocolate chips. Makes having a scoop of cookie dough that much more enjoyable ;)
